2 lbs beef chuck or brisket, cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, diced

4 cloves garlic, minced

1 green bell pepper, diced

1 red bell pepper, diced

2 medium tomatoes, chopped

2 cups beef broth

1 tablespoon tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon dried oregano

2 bay leaves

Salt and black pepper to taste

Fresh cilantro for garnish

Sear the Meat: In a large heavy pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches, searing them on all sides until golden brown. Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, green, and red bell peppers. Sauté for about 5 minutes until the onions become translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

      Build the Flavor: Stir in the chopped tomatoes, beef broth, tomato paste, chili powder, cumin, paprika, oregano, bay leaves, and seared beef. Season generously with salt and black pepper. Bring to a simmer.

        Slow Cook: Reduce the heat to low, cover the pot, and let it simmer for at least 2 hours. For the best flavor, simmer for up to 3 hours, stirring occasionally. If it starts to look dry, add a bit more beef broth.

          Check for Tenderness: After the cooking time, the beef should be very tender. Adjust seasonings if necessary, removing bay leaves before serving.

            Serve and Garnish: Ladle the carne guisada into bowls. Garnish with fresh cilantro and enjoy with warm flour tortillas or white rice.
