1 lb ground beef

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 cup water

1 cup nacho cheese sauce

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

6 large tortillas (flour or corn)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup sliced jalapeños (optional)

1/4 cup chopped cilantro (for garnish)

1 avocado, sliced (for serving)

Salsa (for serving)

Instructions
 

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes). Add the minced garlic and cook for another minute.

    Season the Meat: Increase the heat to medium-high, then add the ground beef to the skillet. Cook until the beef is browned and fully cooked, breaking it up with a spatula as it cooks (about 6-8 minutes).

      Add Seasoning: Stir in the taco seasoning and water. Reduce the heat to low and let it simmer for about 5-7 minutes until the sauce thickens slightly.

        Combine Ingredients: Add the black beans and corn to the beef mixture, stirring until everything is well combined and heated through. Pour in the nacho cheese sauce, continuing to stir until the cheese is melted and creamy.

          Assemble the Wraps: Lay out each tortilla. Spoon the beef and cheese mixture into the center of each tortilla. Top with shredded lettuce, diced tomatoes, and, if desired, jalapeños.

            Wrap Them Up: Fold the sides of the tortilla over the filling, then roll from the bottom to the top to create a wrap.

              Serve: Cut each wrap in half. Garnish with chopped cilantro and serve with avocado slices and salsa on the side.
