Ingredients
  

1 pound (450g) sausage meat (or your favorite sausage, removed from casings)

1 tablespoon fresh sage, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

Salt and pepper, to taste

1 sheet of puff pastry (thawed if frozen)

1 egg, beaten (for egg wash)

Sesame seeds or poppy seeds, for topping (optional)

Cranberry sauce, for serving (optional)

Instructions
 

Preparation of Filling:

    - In a large bowl, combine the sausage meat, chopped sage, thyme, garlic powder, onion powder, ground cinnamon, nutmeg, salt, and pepper. Mix thoroughly until all the ingredients are well integrated.

      Prepare the Pastry:

        - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

          - Roll out the puff pastry onto a floured surface, creating a rectangle approximately 1/8 inch thick.

            Shape the Rolls:

              - Cut the puff pastry sheet into two long rectangles, about 4 inches wide. Place half of the sausage mixture along one edge of each rectangle, making a log shape.

                - Brush the opposite edge of the pastry with a little beaten egg to help seal the rolls.

                  Roll and Seal:

                    - Carefully roll the pastry over the sausage filling to encase it completely. Press the edges to seal. Use a knife to cut the rolled sausage rolls into 2-inch pieces. Place on the prepared baking sheet.

                      Egg Wash and Topping:

                        - Brush the tops of the sausage rolls with the remaining beaten egg to give them a golden finish. Sprinkle sesame or poppy seeds on top if desired.

                          Bake:

                            - Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and flaky, and the sausage is cooked through.

                              Serve:

                                - Once baked, allow the sausage rolls to cool slightly before serving. They are delightful served warm with cranberry sauce for dipping.
