Ingredients
  

1 cup all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

1 cup buttermilk (or milk + 1 tsp vinegar)

1 large egg

2 tbsp melted butter

1 tsp vanilla extract

1/4 tsp cinnamon

1/2 cup crushed candy canes (or peppermint candies)

Red and green sprinkles

Fresh mint leaves, for garnish (optional)

Maple syrup or whipped cream, for serving

Instructions
 

In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.

      Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; small lumps are okay.

        Fold in the crushed candy canes and a sprinkle of red and green sprinkles for a festive touch.

          Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

            Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.

              Remove the pancakes and keep them warm in a low oven while you repeat with the remaining batter.

                Stack the pancakes on a serving plate, add more sprinkles and crushed candy canes on top, and garnish with fresh mint leaves if desired.

                  Serve with maple syrup or whipped cream drizzled over them for an extra festive treat.
