1/2 cup sugar

1/2 cup water

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

4 large flour tortillas

4 ounces cream cheese, softened

1/4 cup finely chopped pecans or walnuts

1 cup powdered sugar (for dusting)

Fresh mint leaves (for garnish)

Prepare the Cranberry Filling: In a medium saucepan over medium heat, combine fresh cranberries, sugar, water, and ground cinnamon. Stir well and bring to a simmer. Cook for about 10-15 minutes, until the cranberries are soft and the mixture thickens. Remove from heat and stir in the vanilla extract. Allow it to cool slightly.

    Mix the Cream Cheese Mixture: In a small bowl, combine softened cream cheese and finely chopped pecans or walnuts. Mix until well blended.

      Assemble the Roll Ups:

        - Lay out one tortilla on a flat surface.

          - Spread a generous layer of the cream cheese mixture over the tortilla, leaving a small border around the edges.

            - Spoon a layer of the cranberry filling on top of the cream cheese.

              - Starting from the edge closest to you, carefully roll the tortilla tightly, pulling in the sides as you go to keep the filling from spilling out.
