2 to 3 pounds beef tenderloin, trimmed

3 tablespoons olive oil

2 tablespoons Dijon mustard

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon black pepper

1 teaspoon kosher salt

1 cup red wine (Merlot or Cabernet Sauvignon)

1 cup beef broth

2 tablespoons unsalted butter

Fresh herbs for garnish (rosemary and thyme)

Instructions
 

Prepare the Tenderloin:

    - Preheat your oven to 400°F (200°C).

      - Pat the beef tenderloin dry with paper towels, then rub it with olive oil, Dijon mustard, minced garlic, fresh rosemary, thyme, pepper, and salt.

        Sear the Meat:

          - In a large, oven-safe skillet or roasting pan over medium-high heat, sear the beef tenderloin for about 4-5 minutes on each side until browned. This helps develop a rich flavor.

            Roast the Tenderloin:

              - Transfer the skillet to the preheated oven and roast for about 25-30 minutes for medium-rare (internal temperature of 135°F/57°C). Adjust the time as necessary for your desired doneness.

                - Once done, remove from the oven and cover loosely with aluminum foil. Let it rest for 15 minutes.

                  Make the Sauce:

                    - In the same skillet, place it over medium heat and add the red wine, scraping the bottom to deglaze and lift any flavor bits.

                      - Allow the wine to reduce by half, then add the beef broth and let it simmer for 5-10 minutes until slightly thickened.

                        - Stir in the butter off the heat for a glossy finish.

                          Serve:

                            - Slice the beef tenderloin into medallions and arrange them on a serving platter.

                              - Drizzle the red wine sauce over the beef and garnish with fresh herbs.
