Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (optional)

1/2 cup milk

2 large eggs

4 tablespoons unsalted butter, melted

1/4 cup sparkling water or club soda (for that light texture)

Instructions

Combine Dry Ingredients: In a large mixing bowl, sift together the flour, baking powder, salt, and black pepper. If you’re using parsley, mix it in as well.

Whisk Wet Ingredients: In another bowl, whisk together the milk, eggs, and melted butter until well combined.

Combine Mixtures: Gradually pour the wet ingredient mixture into the dry ingredients, stirring gently until just combined. Be careful not to over-mix; a few lumps are okay.

Add Sparkling Water: Gently fold in the sparkling water to the batter, using a spatula or wooden spoon. The bubbles in the sparkling water will help make the dumplings light and fluffy.

Rest the Dough: Allow the dumpling batter to rest for 10-15 minutes while you prepare the chicken.

Prepare Chicken and Broth: In a pot, cook your favorite chicken (shredded or cubed) in a delicious broth of your choice. Ensure the broth is at a nice simmer.

Drop Dumplings: Once the broth is simmering, use a tablespoon to scoop the dumpling batter and drop it into the simmering broth. Space them evenly, as they will expand while cooking.

Cover and Cook: Cover the pot with a tight-fitting lid and let the dumplings steam for about 15 minutes. Do not lift the lid during this time; it’s essential for creating a fluffy texture.

Serve: Once the dumplings have puffed up and cooked through, carefully remove the lid and serve hot as a topping to your chicken and broth mixture.

Garnish (Optional): Sprinkle with additional fresh parsley if desired for a touch of color and flavor.
