4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh dill, chopped

1 teaspoon fresh parsley, chopped

Salt and pepper to taste

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1 avocado, diced

Lemon wedges, for serving

Marinate the Salmon: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, dill, parsley, salt, and pepper. Place the salmon fillets in a baking dish and pour the marinade over them. Let them marinate for at least 30 minutes to an hour in the refrigerator.

    Preheat the Grill: Heat your grill or grill pan to medium-high heat. If using a grill pan, you can lightly oil it to prevent sticking.
