4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

2 tablespoons lemon juice

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh dill, chopped (or 1/2 teaspoon dried dill)

1 teaspoon honey

1/2 teaspoon sea salt

1/4 teaspoon black pepper

Zest of 1 lemon

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, chopped

1/4 cup pine nuts, toasted

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Marinade: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, fresh dill, honey, sea salt, black pepper, and lemon zest until well combined.

      Marinate Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let them marinate in the refrigerator for at least 30 minutes, allowing the flavors to meld.

        Prepare Filling: In a medium bowl, combine the chopped spinach, crumbled feta, sun-dried tomatoes, and toasted pine nuts, mixing them until evenly distributed.

          Assemble Salmon: After marinating, remove the salmon from the fridge. With a sharp knife, carefully create a pocket in each fillet by slicing horizontally into the thickest part of the fish.

            Stuff Salmon: Stuff each pocket with the spinach, feta, sun-dried tomato, and pine nut mixture, pressing gently to secure the filling.

              Bake Salmon: Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Serve: Carefully transfer the salmon to serving plates. Drizzle any remaining marinade from the baking sheet over the top for added flavor. Serve hot, garnished with extra fresh dill if desired.
