For the Cake:

2 cups all-purpose flour

2 cups granulated sugar

1 cup unsalted butter, softened

4 large eggs

1 cup buttermilk

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 cup mashed ripe bananas (about 2 medium bananas)

For the Topping:

1 cup crushed pineapple, drained

1 cup shredded coconut

1 cup chopped pecans

1 (8 oz) package cream cheese, softened

1 cup powdered sugar

1/2 cup whipped topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

    Mix the Wet Ingredients: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the buttermilk, mashed bananas, and vanilla extract until well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.

          Bake the Cake: Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely in the pan on a wire rack.

            Prepare the Topping: In a medium bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and mix until creamy. Fold in the whipped topping, crushed pineapple (drained), shredded coconut, and chopped pecans until evenly distributed.

              Assemble the Cake: Once the cake is completely cooled, spread the topping mixture evenly over the top of the cake.

                Chill and Serve: Chill the cake in the refrigerator for at least 2 hours to allow the topping to set. Cut into squares and serve cold or at room temperature.
