Ingredients
  

2 cups strong brewed espresso, cooled

3 tablespoons coffee liqueur (optional)

6 large egg yolks

3/4 cup granulated sugar

2/3 cup milk

2 cups heavy cream, chilled

8 oz mascarpone cheese, softened

1 teaspoon vanilla extract

24 ladyfinger cookies (savoiardi)

Unsweetened cocoa powder, for dusting

Dark chocolate shavings, for garnish

Pinch of salt

Instructions
 

In a small bowl, mix the cooled espresso with coffee liqueur (if using). Set aside.

    In a medium saucepan, whisk together the egg yolks and sugar until well combined. Add the milk and cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 8-10 minutes. Remove from heat and let cool.

      In a mixing bowl, combine the mascarpone cheese, vanilla extract, and a pinch of salt. Gently fold in the cooled custard until smooth.

        In a separate large bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture in three additions until well combined and airy.

          Dip each ladyfinger into the espresso mixture for just a couple of seconds, ensuring they are soaked but not soggy.

            In an 8x8 inch square baking dish or a round cake mold, create a layer of soaked ladyfingers. Spread half of the mascarpone mixture over the ladyfingers, smoothing out with a spatula.

              Repeat the process for a second layer: add another layer of soaked ladyfingers followed by the remaining mascarpone mixture.

                Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the cake to set.

                  Before serving, dust the top generously with unsweetened cocoa powder and garnish with dark chocolate shavings.
