For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1/4 teaspoon salt

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

1 cup fresh raspberries (or raspberry puree)

For the Raspberry Swirl:

1 cup fresh raspberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, sugar, and salt until combined. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool.

      Prepare the Raspberry Swirl: In a small saucepan over medium heat, combine the raspberries, sugar, and lemon juice. Cook until the raspberries break down and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let it cool.

        Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully combined.

          Combine and Swirl: Pour the cheesecake filling over the cooled crust. Using a spoon, drizzle the raspberry swirl over the top. Use a toothpick or knife to gently swirl the raspberry mixture into the cheesecake filling, creating a marbled effect.

            Bake: Bake in the preheated oven for 30-35 minutes or until the center is set but still slightly jiggly. The edges should be firm.

              Cool and Chill: Remove from the oven and let the cheesecake cool at room temperature for about 30 minutes. Then, refrigerate for at least 4 hours, or overnight for the best results.

                Serve: Once chilled, lift the cheesecake out of the pan using the parchment overhang and cut into bars. Serve chilled, optionally garnished with fresh raspberries and whipped cream.
