Ingredients
  

6 large eggs

1 ripe avocado, mashed

2 tablespoons Greek yogurt (or mayonnaise)

1 teaspoon Dijon mustard

1 tablespoon fresh lemon juice

2 tablespoons fresh chives, chopped

1/4 teaspoon garlic powder

Salt and pepper to taste

4 slices of whole grain bread or your favorite sandwich bread

Optional: lettuce leaves or spinach for garnish

Instructions
 

Boil the Eggs: Place the eggs in a pot and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let sit for 10-12 minutes for hard-boiled eggs.

    Cool and Peel: Drain the hot water and transfer the eggs to an ice bath for about 5 minutes until they are cool. Peel the eggs and chop them into small pieces.

      Mix the Salad: In a large bowl, combine the chopped eggs, mashed avocado, Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, chives, garlic powder, salt, and pepper. Mix everything until well combined but still chunky.

        Prepare the Sandwiches: Toast the bread slices if desired. Spoon the avocado egg salad generously onto two slices of bread. Top with lettuce leaves or spinach, then place the other slices on top to form sandwiches.

          Serve: Cut the sandwiches in half and serve immediately, or wrap them up for a delightful lunch later. Enjoy!
