1 lb ground beef (or turkey)

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, undrained

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning

2 cups tortilla chips

2 cups shredded cheddar cheese

1 cup sour cream

1/2 cup sliced black olives (optional)

1 jalapeño, sliced (optional, for extra spice)

Fresh cilantro for garnish

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks (about 5-7 minutes). Drain any excess fat.

      Add the black beans, diced tomatoes, corn, and taco seasoning to the skillet. Stir well to combine and let it simmer for about 5 minutes until heated through.

        In a greased baking dish, spread half of the tortilla chips evenly at the bottom.

          Layer half of the beef mixture over the chips, followed by a generous sprinkle of cheddar cheese. Repeat with the remaining chips, beef mixture, and top with the remaining cheese.

            Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

              While the bake is in the oven, mix sour cream with a pinch of taco seasoning for a flavorful dip (optional).

                Remove the bake from the oven and let it cool for 5 minutes. Top with sliced black olives, jalapeños, and fresh cilantro before serving.
