1 lb boneless, skinless chicken thighs

1 cup teriyaki sauce (store-bought or homemade)

2 tablespoons sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper, sliced (red or yellow for sweetness)

1 cup snap peas

2 green onions, sliced

1 tablespoon sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs, teriyaki sauce, minced garlic, and grated ginger. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator) for maximum flavor.

    Sauté the Chicken: Heat sesame oil in a large skillet over medium heat. Remove the chicken from the marinade (reserving the marinade for later) and cook the thighs for about 5-7 minutes on each side, or until they are golden brown and cooked through.

      Add the Vegetables: Once the chicken is cooked, remove it from the skillet and set aside. In the same skillet, add sliced bell pepper and snap peas. Sauté for about 3-4 minutes until the veggies are tender-crisp.

        Combine Everything: Slice the cooked chicken thighs into strips and return them to the skillet. Pour in the reserved marinade and cook for an additional 3-5 minutes, allowing the sauce to thicken and coat the chicken and vegetables.
