1 pound flank steak, thinly sliced against the grain

1/2 cup cornstarch

1/4 cup vegetable oil (for frying)

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup green onions, sliced (plus more for garnish)

1/2 cup soy sauce

1/4 cup packed brown sugar

2 tablespoons rice vinegar

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 tablespoon chili paste (optional, for heat)

Instructions
 

Prepare the Beef: In a bowl, toss the thinly sliced flank steak with cornstarch until well-coated. Allow it to sit for about 10-15 minutes to form a crispy coating.

    Make the Sauce: In a small bowl, combine soy sauce, brown sugar, rice vinegar, hoisin sauce, sesame oil, garlic, ginger, and chili paste (if using). Stir until the sugar dissolves and set aside.

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Fry the Beef: Add the coated beef slices in batches (avoid overcrowding) and fry for about 2-3 minutes per side, or until they are golden brown and crispy. Remove the beef from the skillet and drain on paper towels.

          Combine: In the same skillet, lower the heat to medium and pour in the sauce mixture. Let it simmer for 1-2 minutes until it slightly thickens.

            Toss Together: Add the crispy beef back into the skillet and toss well to coat each piece in the sticky sauce. Add the green onions and stir for another minute.
