Ingredients

1 lb flank steak, sliced thinly against the grain

¼ cup cornstarch

2 tablespoons vegetable oil

1 tablespoon sesame oil

4 cloves garlic, minced

1-inch piece of ginger, grated

½ cup soy sauce

½ cup brown sugar

1 tablespoon rice vinegar

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or noodles (for serving)

Instructions

Prep the Beef: In a large bowl, add the sliced flank steak and coat it with cornstarch. Toss to ensure all pieces are well-covered. Let it sit for about 20 minutes to marinate.

Cook the Beef: In a large skillet or wok, heat vegetable oil over medium-high heat. Once hot, add the beef in batches, avoiding overcrowding the pan. Cook until browned and crispy, about 2-3 minutes per side. Remove and set aside on a paper towel-lined plate.

Make the Sauce: In the same skillet, lower the heat to medium and add sesame oil. Sauté the minced garlic and grated ginger for about 30 seconds, or until fragrant. Then, add soy sauce, brown sugar, and rice vinegar, stirring until the sugar dissolves and the sauce thickens slightly (about 3-5 minutes).

Combine: Return the crispy beef to the skillet with the sauce, tossing to coat each piece generously. Allow it to simmer for a minute so the beef absorbs the flavors.

Serve: Transfer the Sticky Crispy Mongolian Beef to a serving plate, garnishing with chopped green onions and sesame seeds. Serve with rice or noodles for a complete meal.
