1 box red velvet cake mix

1/2 cup vegetable oil

3 large eggs

1 cup cream cheese, softened

1/2 cup powdered sugar

1/2 tsp vanilla extract

1 cup whipped cream or whipped topping

Red sprinkles (for garnish)

Optional: chocolate chips or mini chocolate chips (for added texture)

Instructions
 

Prepare the Red Velvet Cake: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the red velvet cake mix, vegetable oil, and eggs. Beat until well combined. The batter will be thick and smooth.

    Bake the Cake: Pour the batter into a greased 9x13 inch baking pan. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

      Prepare the Cheesecake Filling: In another mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until creamy and smooth. Gently fold in the whipped cream until well combined.

        Create Bites: Once the cake is completely cool, crumble it into a large bowl. Use your hands to break it into fine crumbs. Take about a tablespoon of the crumb mixture and flatten it in the palm of your hand. Place a teaspoon of cheesecake filling in the center, then fold the cake around the filling, rolling it into a ball. Repeat until all the mixture is used.

          Chill: Place the cheesecake bites on a baking tray lined with parchment paper. Once shaped, refrigerate for at least 30 minutes to help them set.
