8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup whipped cream (store-bought or homemade)

1 cup fresh raspberries (plus extra for garnish)

1 cup crushed graham crackers

4 tbsp unsalted butter, melted

1/4 cup fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Stir until the mixture resembles wet sand. Press the mixture evenly into the bottom of a mini muffin tin or silicone molds to form small crusts.

    Make the cheesecake filling: In a separate bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

      Fold in the whipped cream: Gently fold the whipped cream into the cream cheese mixture until there are no streaks visible and it is light and fluffy.

        Incorporate raspberries: Carefully fold in the fresh raspberries, being gentle to keep some whole for added texture and presentation.

          Assemble the bites: Spoon the cheesecake filling over the prepared crusts in the muffin tin, filling each indentation to the top.

            Chill: Place the tin in the refrigerator for at least 2 hours, or until the cheesecake bites are firm.

              Serve: Once set, carefully remove the cheesecake bites from the tin. Garnish with additional raspberries and mint leaves, if desired. Serve chilled.
