12 oz pennette pasta

4 oz pancetta, diced

1 bunch asparagus, trimmed and cut into 2-inch pieces

2 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

2 tbsp olive oil

Zest of 1 lemon

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pennette pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain pasta and set aside.

    Cook the Pancetta: In a large skillet over medium heat, add the diced pancetta. Cook until it becomes crispy, about 5-7 minutes. Use a slotted spoon to remove the pancetta from the skillet and set aside, leaving the rendered fat in the skillet.

      Sauté the Asparagus: In the same skillet, add olive oil, and heat over medium heat. Add the asparagus pieces and sauté for about 4-5 minutes, until they are tender but still crisp. Add the minced garlic and cook for another minute until fragrant.

        Combine Ingredients: Return the crispy pancetta to the skillet, then pour in the heavy cream. Stir to combine and let it simmer for 2-3 minutes. If the sauce appears too thick, add a bit of reserved pasta water until you reach your desired consistency.

          Mix in Pasta: Add the drained pennette pasta to the skillet, tossing until well coated with the creamy mixture. Stir in the grated Parmesan cheese, lemon zest, and season with salt and black pepper to taste. If the mixture is too stiff, add more reserved pasta water as needed.
