1 lb flank steak, thinly sliced against the grain

2 tablespoons cornstarch

2 tablespoons vegetable oil

4 green onions, sliced into 1-inch pieces

3 cloves garlic, minced

1 inch ginger, grated

1/2 cup soy sauce (low sodium preferred)

1/2 cup brown sugar

1/4 teaspoon red pepper flakes (optional, for spice)

Cooked rice, for serving

Prepare the Beef: In a bowl, toss the thinly sliced flank steak with the cornstarch until evenly coated. Let it sit for about 10 minutes to allow the cornstarch to adhere.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the beef slices in a single layer (you may need to do this in batches to avoid overcrowding). Cook for about 2-3 minutes until browned, then flip and cook for another 2-3 minutes. Remove the beef from the pan and set aside.

      Sauté Aromatics: In the same skillet, add the garlic, ginger, and green onions. Stir-fry for about 30 seconds until fragrant.

        Make the Sauce: In a bowl, combine the soy sauce, brown sugar, and red pepper flakes (if using). Pour this mixture into the skillet, bringing it to a gentle simmer. Stir occasionally until the sauce thickens slightly, about 2-3 minutes.
