Easy Low Carb Chicken Casserole

Ingredients
  

3 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup broccoli florets (fresh or frozen)

1 cup cauliflower florets (fresh or frozen)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 cup grated Parmesan cheese

Optional: chopped parsley for garnish

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Veggies: If using fresh broccoli and cauliflower, steam them until just tender, about 5 minutes. If using frozen, thaw and drain any excess water.

      Combine Ingredients: In a large mixing bowl, combine the shredded chicken, broccoli, cauliflower, cream cheese, chicken broth, garlic powder, onion powder, black pepper, paprika, and salt. Mix until all ingredients are well incorporated.

        Add Cheddar Cheese: Stir in 3/4 cup of shredded cheddar cheese into the mixture, saving the rest for topping.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Top with Cheeses: Sprinkle the remaining shredded cheddar and Parmesan cheese over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

                Garnish: Once out of the oven, let it cool slightly. Garnish with chopped parsley if desired before serving.

                  Serve: Scoop portions onto plates and enjoy your low carb delight!
