1 whole chicken (3-4 lbs)

4 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon dried oregano

1 lemon, halved

1 head of garlic, halved

Salt and pepper, to taste

Fresh herbs for garnish (such as parsley or thyme)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: Pat the whole chicken dry with paper towels to ensure the skin crisps up nicely.

      Make the Herb Mixture: In a small bowl, mix together the olive oil, garlic powder, onion powder, thyme, rosemary, oregano, salt, and pepper.

        Season the Chicken: Rub the herb mixture all over the chicken, making sure to get it under the skin for maximum flavor.

          Add Aromatics: Stuff the cavity of the chicken with the halved lemon and garlic. This will infuse the meat with additional flavor as it cooks.
