1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

2 cups panko breadcrumbs

Oil for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon honey

1 teaspoon sriracha (optional for extra heat)

Green onions and sesame seeds for garnish

Instructions
 

Prepare the Chicken: In a mixing bowl, combine flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. Toss the chicken pieces in the seasoned flour until well coated.

    Set Up Breading Station: In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

      Bread the Chicken: Dip each flour-coated chicken piece into the egg mixture, allowing excess to drip off, then roll it in the panko breadcrumbs until fully coated.

        Heat the Oil: In a large frying pan or deep skillet, heat oil over medium-high heat (about 350°F/175°C). Fill with enough oil to submerge the chicken pieces halfway.

          Fry the Chicken: Carefully add chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for 4-6 minutes per side or until golden brown and crispy. Use a slotted spoon to transfer the cooked chicken to a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, honey, and sriracha (if using) until smooth.

              Coat the Chicken: In a large bowl, combine the cooked chicken with the Bang Bang sauce, tossing to ensure each piece is well-coated.

                Serve: Garnish with chopped green onions and sesame seeds. Serve immediately while crispy, either on its own or with a side of steamed rice or veggies.
