Ingredients

1 package of puff pastry (2 sheets), thawed

8 ounces of brie cheese, cut into small cubes

1 cup of cranberry sauce (homemade or store-bought)

1 egg, beaten (for egg wash)

Fresh rosemary or thyme leaves for garnish (optional)

Sea salt and black pepper to taste

Drizzle of honey (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Puff Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface. Use a pastry cutter or knife to cut each sheet into 2-inch squares. You should get about 24 squares in total.

Assemble Bites: Place each pastry square into a greased mini muffin tin. Press down gently to form a cup.

Add Cheese: Place a cube of brie cheese in the bottom of each pastry cup.

Top with Cranberry Sauce: Spoon approximately 1 teaspoon of cranberry sauce over the brie cheese in each cup.

Egg Wash: Brush the edges of the puff pastry with the beaten egg to give it a golden-brown color when baked.

Season and Bake: If desired, sprinkle a pinch of sea salt and black pepper over each bite. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.

Garnish: Once out of the oven, let them cool for a minute. If desired, add a small sprig of fresh rosemary or thyme for garnish and a drizzle of honey on top for extra flavor.

Serve: Serve these tasty cranberry brie bites warm or at room temperature as a delightful appetizer for any occasion.
