Easy Chorizo Pasta

Ingredients
  

8 oz (225g) spaghetti or penne pasta

200g chorizo sausage, sliced

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or penne according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Brown the Chorizo: In a large skillet over medium heat, add the sliced chorizo. Cook for about 5-7 minutes until it starts to brown and release its oils. Remove the chorizo from the skillet and set aside, leaving the oils in the pan.

      Sauté Aromatics: In the same skillet, add olive oil if needed. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add Tomatoes & Spices: Pour in the can of diced tomatoes and add the smoked paprika and dried oregano. Allow the mixture to simmer for about 5 minutes, stirring occasionally.

          Combine Ingredients: Return the cooked chorizo to the skillet and mix well. Add the drained pasta to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

            Season & Serve: Taste and season with salt and pepper as needed. Transfer the pasta to individual plates, garnish with fresh basil, and finish with grated Parmesan cheese.
