Ingredients
  

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup soy sauce

1/4 cup bourbon whiskey

1/4 cup brown sugar

1/4 cup apple cider vinegar

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 green onions, chopped (for garnish)

1 tbsp cornstarch

2 tbsp water

2 tbsp vegetable oil

Cooked rice, for serving

Instructions
 

Marinate the Chicken: In a medium bowl, combine the soy sauce, bourbon, brown sugar, apple cider vinegar, minced garlic, and grated ginger. Add the chicken pieces and marinate for at least 30 minutes in the refrigerator to absorb the flavors.

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add to the skillet. Cook for about 5-7 minutes or until the chicken is browned and cooked through, stirring occasionally.

      Make the Sauce: In the same skillet, pour in the reserved marinade. Bring it to a gentle boil. In a small bowl, mix the cornstarch with water to create a slurry. Slowly add this to the skillet while stirring to thicken the sauce. Cook for an additional 2-3 minutes until the sauce has thickened.

        Serve: Once the chicken is well coated with the sauce, remove from heat. Serve over cooked rice and garnish with chopped green onions for a fresh crunch.
