1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 cup heavy cream

1/2 cup vanilla pudding mix (instant)

1/2 cup chocolate ganache (store-bought or homemade)

Optional: sprinkles for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Prepare the Dough: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined. Set aside.

      Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and light in color, about 2-3 minutes.

        Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture. Mix until fully combined.

          Combine Dry and Wet Ingredients: Gradually add the dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix.

            Shape the Cookie Dough: Using a small cookie scoop or tablespoon, scoop the dough onto the prepared baking sheet, spacing them a couple of inches apart. Flatten each ball slightly with the back of a spoon.

              Bake: Bake in the preheated oven for 8-10 minutes, or until the edges are set and the centers still look soft. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

                Make the Cream Filling: In a bowl, whisk the heavy cream and vanilla pudding mix together until it thickens, about 2-3 minutes.

                  Assemble the Cookies: Once the cookies are completely cool, take one cookie and dollop some of the cream filling on the bottom side. Place another cookie on top to create a sandwich. Repeat with remaining cookies.

                    Top with Ganache: Drizzle or spread the chocolate ganache over the top of each cookie sandwich. Optionally, sprinkle with colorful sprinkles for an extra fun touch.
