8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup panko bread crumbs

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

2 cloves garlic, minced

2 tbsp olive oil

1/2 tsp smoked paprika

1/4 tsp black pepper

1/4 cup scallions, sliced (for garnish)

1/2 cup cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Shrimp: In a medium bowl, soak the shrimp in buttermilk for about 20 minutes. This helps to tenderize the shrimp and enhance the flavor.
