12 oz penne pasta

1 lb Andouille sausage (sliced)

1 tablespoon olive oil

1 medium onion (chopped)

3 cloves garlic (minced)

1 red bell pepper (diced)

1 green bell pepper (diced)

1 cup heavy cream

1 cup chicken broth

1 tablespoon Cajun seasoning

1 cup cherry tomatoes (halved)

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley (chopped)

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and cook for about 3-4 minutes until translucent. Then, add the minced garlic and cook for another minute until fragrant.

        Add Peppers: Stir in the diced red and green bell peppers, cooking until they soften, about 5 minutes.

          Make the Sauce: Pour in the heavy cream and chicken broth, and stir in the Cajun seasoning. Bring the mixture to a simmer, allowing it to thicken slightly for about 5 minutes.

            Combine Ingredients: Add the cherry tomatoes and cooked sausage back into the skillet. Stir to combine everything, cooking for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.

              Finish with Pasta and Cheese: Add the cooked penne pasta to the skillet and stir to combine. Sprinkle in the grated Parmesan cheese, stirring until melted and creamy.

                Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve warm with additional Parmesan cheese if desired.
