Ingredients

8 ounces rotini or fusilli pasta

1 cup dill pickles, diced

1/2 cup red onion, finely chopped

1 cup cherry tomatoes, halved

1/2 cup celery, diced

1/4 cup fresh dill, chopped

1 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon pickle juice (from the pickle jar)

Salt and pepper to taste

Instructions

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool it down quickly.

In a large mixing bowl, combine the diced dill pickles, red onion, cherry tomatoes, celery, and fresh dill.

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, pickle juice, salt, and pepper until well combined.

Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the pasta mix, and gently toss everything together until evenly coated.

Taste and adjust seasoning with additional salt and pepper if needed. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Serve chilled as a refreshing side dish at your next barbecue or picnic! Enjoy!
