4 large russet potatoes

1 cup diced ham

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup dill pickle relish

2 tablespoons dill weed (fresh or dried)

2 tablespoons butter, softened

Salt and pepper to taste

2 green onions, sliced (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the potatoes thoroughly and pierce each potato several times with a fork to allow steam to escape.

      Bake the potatoes directly on the oven rack for about 45-60 minutes or until tender when pierced with a fork.

        Once the potatoes are done, remove them from the oven and let them cool slightly.

          Carefully cut each potato in half lengthwise, scoop out the insides into a large mixing bowl, leaving a thin layer of potato to help maintain the shape of the skins.

            To the potato flesh, add the diced ham, shredded cheddar cheese, sour cream, dill pickle relish, dill weed, and softened butter. Season with salt and pepper, then mash everything together until well combined and creamy.

              Spoon the filling back into the potato skins, mounding it slightly.

                Place the stuffed potatoes on a baking sheet and bake in the oven for an additional 15-20 minutes, until heated through and the tops are slightly golden.

                  Remove from the oven and sprinkle sliced green onions on top for garnish.
