Ingredients

6 large eggs, hard-boiled and peeled

1/4 cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1/4 cup finely chopped celery

1/4 cup finely chopped red onion

1 tablespoon fresh chives, chopped

Salt and pepper to taste

A pinch of smoked paprika (for garnish)

Fresh lettuce leaves (for serving)

Instructions

Begin by hard-boiling the eggs. Place them in a saucepan, cover with water, and bring to a boil. Once boiling, reduce the heat and simmer for 10-12 minutes. Remove from heat and let them sit in cold water for about 5 minutes. Afterwards, peel and chop the eggs into bite-sized pieces.

In a large mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, and Worcestershire sauce. Mix well until smooth.

Add the chopped eggs, celery, red onion, and chives to the bowl. Gently fold the mixture with a spatula, ensuring that the eggs are well coated with the dressing without breaking them up too much.

Season with salt and pepper to taste; adjust the seasoning according to your preference.

Cover the egg salad with plastic wrap or a lid, and refrigerate for at least 30 minutes to allow flavors to meld.

When ready to serve, scoop a generous portion of the egg salad onto fresh lettuce leaves on a platter.

Sprinkle a pinch of smoked paprika over the top for a smoky finish and additional flavor.
