2 lbs Yukon Gold potatoes, peeled and diced

1 cup heavy cream

1 cup shredded Gruyère cheese

1 cup diced cooked ham

1 medium onion, finely chopped

2 cloves garlic, minced

4 tablespoons unsalted butter

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional, for a kick)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Potatoes: Place the diced potatoes in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes or until tender. Drain and set aside.

      Sauté the Aromatics: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook for 5 minutes until translucent. Add the garlic and sauté for another minute until fragrant.

        Make the Cream Mixture: In a bowl, combine the heavy cream, salt, black pepper, smoked paprika, and cayenne pepper (if using). Mix well.

          Assemble the Dish: In a large baking dish, layer half of the cooked potatoes evenly. Top with half of the sautéed onions, half the ham, and sprinkle with half the Gruyère cheese. Repeat the layers with the remaining potatoes, onions, ham, and cheese.

            Pour the Cream: Drizzle the cream mixture over the assembled layers. Dot the top with the remaining 2 tablespoons of butter.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbling.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped chives before serving.
