Ingredients
  

2 pounds of Yukon Gold potatoes, peeled and diced

1 cup of heavy cream

1 cup of shredded Gruyère cheese

1 cup of shredded sharp cheddar cheese

1/2 cup of unsalted butter, melted

1 medium onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of paprika

Salt and pepper, to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15 minutes. Drain and set aside.

      In a skillet, melt half of the butter over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent, about 5-7 minutes.

        In a large mixing bowl, combine the cooked potatoes, sautéed onion and garlic, heavy cream, melted butter, paprika, salt, and pepper. Mix well until the potatoes are well coated.

          Fold in the Gruyère and cheddar cheeses, saving a handful for topping.

            Transfer the potato mixture into a greased 9x13-inch baking dish. Sprinkle the remaining cheese on top.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

                Remove from the oven and let it rest for 5-10 minutes. Garnish with fresh chives before serving.
