2 pounds of Yukon Gold potatoes, peeled and diced

1 cup heavy cream

1 cup whole milk

1 ½ cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 tablespoons unsalted butter, divided

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper, to taste

½ teaspoon smoked paprika

¼ cup fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Potatoes: In a large pot, add the diced Yukon Gold potatoes and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for about 10-12 minutes, or until the potatoes are fork-tender. Drain and set aside.

      Sauté the Aromatics: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and dried thyme; cook for 1 additional minute until fragrant. Remove from heat and set aside.

        Make the Cheese Sauce: In a medium saucepan, combine the heavy cream, whole milk, the remaining 2 tablespoons of butter, salt, pepper, and smoked paprika. Heat over medium-low until just warm. Stir in the sharp cheddar and Gruyère cheeses until melted and creamy. Adjust seasoning to taste.

          Combine Ingredients: In a large mixing bowl, gently combine the cooked potatoes with the sautéed onions and garlic. Pour the cheese sauce over the potatoes and mix gently to coat.

            Bake: Transfer the cheesy potato mixture into a greased 9x13 inch baking dish. Spread it evenly and sprinkle some extra cheese on top if desired. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown on top.

              Garnish and Serve: Once out of the oven, allow it to sit for 5 minutes before serving. Garnish with freshly chopped chives for a pop of color and flavor.
