2 cups fresh strawberries, hulled and sliced

1 cup cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 box (15.25 oz) yellow cake mix

1/2 cup unsalted butter, melted

1 cup milk

1 teaspoon baking powder

1/4 teaspoon salt

Whipped cream (for serving, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

    In a medium bowl, mix together the sliced strawberries, cream cheese, 1/4 cup of granulated sugar, and vanilla extract until well combined. Set aside.

      In another bowl, combine the yellow cake mix, melted butter, milk, baking powder, and salt. Stir until just combined; do not overmix.

        Pour the cake batter into the greased baking dish and spread it evenly across the bottom.

          Spoon the strawberry and cream cheese mixture evenly on top of the cake batter.

            Sprinkle the remaining 1/4 cup of granulated sugar over the strawberries for added sweetness.

              Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

                Let the cake cool slightly before serving. Serve warm or at room temperature, topped with whipped cream and garnished with fresh mint leaves if desired.
