Ingredients

1 box of vanilla cake mix (plus ingredients required for the mix)

1 cup fresh or frozen cranberries

1 cup sweetened condensed milk

½ cup cranberry juice

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

½ cup white chocolate chips

¼ cup chopped pecans (optional)

Fresh cranberries and mint leaves for garnish (optional)

Instructions

Prepare the Cake: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan. Prepare the vanilla cake mix according to the package directions, baking in the pan for the recommended time. Once baked, let the cake cool in the pan for 10 minutes and then invert onto a wire rack to cool completely.

Prepare the Cranberry Sauce: While the cake cools, combine the cranberries and cranberry juice in a small saucepan over medium heat. Cook until the cranberries burst and the mixture thickens, about 10 minutes. Remove from heat and set aside to cool.

Poke the Cake: Once the cake has fully cooled, use the handle of a wooden spoon to poke holes all over the cake, about 1 inch apart.

Add the Sauce and Milk: Pour the sweetened condensed milk over the cake, ensuring it seeps into the holes. Then, gently spoon the cranberry sauce evenly over the top, allowing it to also fill the holes.

Prepare the Whipped Cream Topping: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assemble the Cake: Spread the whipped cream mixture evenly over the entire cake. Sprinkle white chocolate chips and chopped pecans on top for added texture and flavor.

Chill and Garnish: Cover the cake with plastic wrap and refrigerate for at least 2 hours (or overnight) to let the flavors meld together. Before serving, garnish with fresh cranberries and mint leaves if desired.

Serve and Enjoy: Slice the cake and serve chilled for a festive treat that everyone will love!
