Ingredients

1 (8 oz) package cream cheese, softened

1/2 cup (1 stick) unsalted butter, softened

1 egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1 box (15.25 oz) yellow cake mix

1/2 cup powdered sugar, plus more for dusting

1/4 teaspoon salt

Sprinkles or festive decorations for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line cookie sheets with parchment paper for easy cleanup.

Cream the Base: In a large mixing bowl, beat the softened cream cheese and butter together until creamy and smooth using an electric mixer on medium speed.

Add Egg and Extracts: Add the egg, vanilla extract, and almond extract to the cream cheese mixture. Beat until well combined.

Incorporate Cake Mix: Gradually add the yellow cake mix, powdered sugar, and salt into the mixture. Stir until a soft dough forms. The dough will be quite sticky; that’s okay!

Chill the Dough (optional): For easier handling, you can chill the dough for about 30 minutes, though it's not mandatory.

Scoop the Cookies: Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared cookie sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly underbaked (they will continue to cook on the sheet after removing from the oven).

Dust with Powdered Sugar: Allow the cookies to cool on the baking sheets for about 5 minutes, then transfer them to a wire rack. While they're still warm, dust them generously with powdered sugar.

Decorate: If desired, add sprinkles or festive decorations on top before the powdered sugar sets.

Serve & Enjoy: Once completely cool, enjoy your gooey butter cookies with a glass of milk or hot cocoa!
