12 oz fettuccine or penne pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, sliced

1 bell pepper (red or yellow), sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 cup coconut milk

1 teaspoon jerk seasoning (adjust to taste)

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Juice of 1 lime

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the fettuccine or penne according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced onion and bell pepper. Sauté until they become tender, about 5 minutes.

      Add the Garlic and Tomatoes: Stir in the minced garlic and cherry tomatoes, cooking for an additional 2-3 minutes until fragrant and the tomatoes start to soften.

        Cook the Shrimp: Push the vegetables to the side of the skillet and add the shrimp. Sprinkle jerk seasoning, paprika, and season with salt and pepper. Cook the shrimp until pink and opaque, about 3-4 minutes, stirring occasionally.

          Create the Sauce: Pour in the coconut milk and bring the mixture to a gentle simmer. Allow it to simmer for 2-3 minutes to thicken slightly.

            Combine: Add the cooked pasta to the skillet and toss everything together, ensuring the pasta is well-coated in the creamy sauce.

              Finish & Serve: Squeeze fresh lime juice over the dish and garnish with chopped cilantro or parsley. Serve hot and enjoy!
