For the crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1/4 cup sour cream

For the pecan topping:

1 cup pecans, chopped

1/2 cup light corn syrup

1/2 cup brown sugar

1/4 cup unsalted butter, melted

1 tsp vanilla extract

2 large eggs

Instructions
 

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

        - Press the mixture into the bottom of a greased 9x13 inch baking dish to form an even layer. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

          Make the cheesecake layer:

            - In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.

              - Add the vanilla extract and mix well.

                - Add the eggs one at a time, mixing after each addition until just combined.

                  - Finally, add the sour cream and mix until smooth.

                    Assemble the bars:

                      - Pour the cheesecake batter over the cooled crust, spreading it evenly.

                        - Bake in the preheated oven for 30-35 minutes or until the edges are set and the center slightly jiggles.

                          Prepare the pecan topping:

                            - In a separate mixing bowl, combine chopped pecans, corn syrup, brown sugar, melted butter, vanilla extract, and eggs. Mix until well combined.

                              Bake with topping:

                                - After the cheesecake layer has baked for 30-35 minutes, remove it from the oven. Pour the pecan topping mixture over the cheesecake layer, spreading it evenly.

                                  - Return the dish to the oven and bake for an additional 25-30 minutes until the pecan topping is set and bubbly.

                                    Cool and slice:

                                      - Once baked, remove from the oven and allow it to cool in the pan at room temperature for at least an hour.

                                        - Refrigerate for at least 4 hours or overnight for the best flavor and easier slicing.

                                          - Cut into squares and serve chilled.
