4 large navel oranges, peeled and segmented

1 cup mini marshmallows

1 cup Greek yogurt (vanilla or plain)

½ cup whipped topping (such as Cool Whip)

1 tablespoon honey or maple syrup (optional)

½ teaspoon vanilla extract

1 cup shredded coconut (unsweetened)

½ cup sliced almonds (or your favorite nuts)

Fresh mint leaves for garnish (optional)

Instructions
 

Begin by preparing the oranges. Peel and segment the navel oranges, then place them in a large mixing bowl.

    Add the mini marshmallows to the bowl with the orange segments.

      In a separate bowl, combine the Greek yogurt, whipped topping, honey or maple syrup (if using), and vanilla extract. Mix until smooth and well combined.

        Gently fold the yogurt mixture into the bowl with the oranges and marshmallows until everything is well coated.

          Stir in the shredded coconut and sliced almonds, reserving a few for garnish.

            Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

              Serve the salad in individual bowls or on a large serving platter. Garnish with additional shredded coconut, sliced almonds, and fresh mint leaves if desired.
