12 oz pasta (spaghetti or penne)

1 cup pitted Kalamata olives, roughly chopped

1 cup green olives, roughly chopped

2 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1/4 cup capers, rinsed and drained

1/2 tsp red pepper flakes (adjust to taste)

1/2 cup fresh basil, chopped

1/4 cup extra virgin olive oil

Zest and juice of 1 lemon

Salt and pepper to taste

Freshly grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain and set aside.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, sauté the minced garlic for about 1 minute until fragrant, being careful not to let it burn.

      Add Ingredients: Stir in the chopped Kalamata and green olives, sun-dried tomatoes, capers, and red pepper flakes. Cook for another 3-4 minutes, allowing the flavors to meld and the olives to soften slightly.

        Combine with Pasta: Add the cooked pasta to the skillet, tossing well to combine it with the olive mixture. If the pasta seems dry, gradually add some reserved pasta water until you reach your desired consistency.

          Finish Off: Remove the skillet from heat and stir in the fresh basil, lemon zest, and lemon juice. Season with salt and pepper to taste. Toss everything together gently to ensure even distribution of flavors.

            Serve: Plate the pasta and, if desired, sprinkle each serving with freshly grated Parmesan cheese. Garnish with additional fresh basil if you like.
