Ingredients
  

3 cups cooked, shredded chicken

1 can (10.5 oz) condensed cream of mushroom soup

1 can (10.5 oz) condensed cream of chicken soup

1 cup sour cream

1 can (10 oz) diced tomatoes with green chilies, drained

1 teaspoon taco seasoning

12 corn tortillas, cut into quarters

2 cups shredded cheddar cheese

1 cup chopped onion

1 cup chopped bell pepper (any color)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Vegetables: In a skillet over medium heat, add the olive oil. Sauté the chopped onion and bell pepper until they are soft and translucent, about 5-7 minutes. Remove from heat.

      Make the Sauce: In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, sour cream, diced tomatoes with green chilies, taco seasoning, salt, and pepper. Mix well until all ingredients are combined.

        Layer the Casserole:

          - In a greased 9x13 inch baking dish, spread a layer of the sauce mixture at the bottom.

            - Next, layer half of the torn corn tortillas over the sauce.

              - Then, add half of the shredded chicken and half of the sautéed vegetables on top of the tortillas.

                - Sprinkle 1 cup of shredded cheddar cheese over this layer.

                  - Repeat the layers (sauce, tortillas, chicken, vegetables, and cheese), ending with a final layer of sauce and the remaining cheese on top.

                    Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden.

                      Serve: Once baked, let the casserole sit for about 5 minutes before serving. Garnish with fresh cilantro or chopped green onions if desired.
