1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn tortillas

1 can (10 oz) red enchilada sauce

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Prepare the Filling: In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat.

    Season the Beef: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Cook for an additional 2 minutes until the spices are fragrant.

      Prepare Tortillas: While the beef is cooking, warm the corn tortillas in a separate pan or microwave to make them pliable.

        Assemble Enchiladas: Spread 1/3 of the enchilada sauce in the bottom of a 9x13 inch baking dish. Take a tortilla, spoon 2-3 tablespoons of the beef mixture into the center, sprinkle with cheese, and roll it up. Place seam-side down in the baking dish. Repeat with remaining tortillas.

          Top with Sauce and Cheese: Once all enchiladas are assembled, pour the remaining enchilada sauce over the top, and sprinkle with the remaining cheese.

            Bake: Preheat the oven to 375°F (190°C). Bake for 15 minutes or until the cheese is bubbly and slightly golden.

              Serve: Remove from the oven, garnish with fresh cilantro, and serve with a dollop of sour cream on the side.
