Ingredients

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 small onion, finely chopped

1 large egg

1/4 cup milk

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/2 cup marinara sauce (store-bought or homemade)

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan with cooking spray or olive oil.

Prepare Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, and chopped onion.

Combine Wet Ingredients: In a separate bowl, whisk together the egg and milk until well combined.

Mix Everything Together: Pour the egg mixture into the bowl with the chicken and breadcrumb mixture. Add the dried oregano, salt, and black pepper. Mix all the ingredients together until just combined; take care not to overmix.

Shape the Meatloaf: Transfer the mixture into the prepared loaf pan, pressing it down gently to shape it into a loaf.

Add Sauce: Spread the marinara sauce evenly over the top of the meatloaf.

Bake: Place the loaf pan in the preheated oven and bake for about 45-55 minutes, or until the internal temperature of the meatloaf reaches 165°F (74°C).

Rest and Slice: Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute, making it juicier and more flavorful.

Serve: Slice and serve warm, garnishing with extra parsley if desired. This meatloaf pairs beautifully with mashed potatoes or a fresh green salad.
