1 cup creamy peanut butter

3/4 cup granulated sugar

1/2 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (optional for melting chocolate)

Additional granulated sugar for rolling

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Ingredients: In a large mixing bowl, combine the peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix until smooth and well combined.

      Add Dry Ingredients: Sprinkle in the baking soda and salt, then mix until incorporated.

        Form Cookies: Using a tablespoon, scoop out dough and roll it into balls. Roll each ball in granulated sugar before placing them on the prepared baking sheet, spacing them about 2 inches apart.

          Make Thumbprint: Using your thumb or the back of a measuring spoon, gently press down in the center of each cookie ball to create a thumbprint.

            Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheet for about 5 minutes.

              Melt Chocolate: While the cookies are cooling, melt the semi-sweet chocolate chips with coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth and melted.

                Fill Cookies: Once the cookies have cooled slightly, spoon or pipe the melted chocolate into each thumbprint, filling them generously.

                  Cool Completely: Allow the cookies to cool completely on a wire rack until the chocolate is set.
