2 large chicken breasts

1/2 cup chipotle ranch dressing (store-bought or homemade)

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen, thawed)

1 cup shredded sharp cheddar cheese

1 ripe avocado, sliced

1 cup diced tomatoes

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken breasts, chipotle ranch dressing, chili powder, garlic powder, cumin, salt, and pepper. Ensure the chicken is well-coated. Cover and marinate in the refrigerator for at least 30 minutes or overnight for best flavor.

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let rest for a few minutes before slicing.

      Prepare the Burrito Filling: In a large bowl, mix together the cooked rice, black beans, corn, diced tomatoes, and half of the shredded cheddar cheese. Season with salt and pepper to taste.

        Assemble the Burritos: Lay out a flour tortilla on a clean surface. Place a generous scoop of the rice and bean mixture in the center, top with slices of grilled chicken, avocado, and a sprinkle of the remaining cheese.

          Wrap the Burrito: Fold in the sides of the tortilla and then roll from the bottom up, ensuring all fillings are tightly wrapped. Repeat with remaining tortillas and fillings.

            Grill the Burritos: Preheat the grill again over medium heat. Place the burritos seam-side down on the grill and cook for about 2-3 minutes on each side, or until the tortillas are golden brown and crispy.

              Serve: Slice the burritos in half, garnish with fresh cilantro, and serve with lime wedges on the side.
