1 lb ground chicken

1 medium onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

2 tbsp Cajun seasoning

1 cup diced tomatoes (canned or fresh)

1/2 cup chicken broth

1 tbsp Worcestershire sauce

1 tbsp olive oil

Salt and pepper to taste

4 hamburger buns

Optional toppings: sliced jalapeños, shredded cheddar cheese, and chopped green onions

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until they start to soften.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the ground chicken to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

        Once the chicken is cooked, stir in the Cajun seasoning, diced tomatoes, chicken broth, and Worcestershire sauce. Bring the mixture to a simmer and let it cook for 10 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

          Meanwhile, toast the hamburger buns until golden brown.

            To assemble, spoon the Cajun chicken mixture generously onto the bottom half of each toasted bun. Top with optional jalapeños, cheese, and green onions if desired, then place the top half of the bun on each sloppy joe.
