1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

1/4 cup milk

2 cloves garlic, minced

1/4 cup chopped fresh parsley (or 2 tablespoons dried)

1 large egg

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1/2 cup marinara sauce (for topping)

Additional Parmesan cheese for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin for mini meatloaves.

    Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, milk, minced garlic, chopped parsley, egg, onion powder, dried Italian herbs, salt, and pepper. Use your hands or a spoon to mix the ingredients until just combined. Avoid overmixing to keep the meatloaf tender.

      Shape Meatloaves: If using a baking sheet, shape the mixture into individual oval loaves about 1 inch thick. If using a muffin tin, fill each cup halfway with the mixture.

        Add Marinara Sauce: Spoon a tablespoon of marinara sauce on top of each meatloaf (or each muffin cup) to keep them moist and add flavor.

          Bake: Place the meatloaves in the preheated oven and bake for 25-30 minutes, or until they reach an internal temperature of 165°F (75°C) and are golden brown. If you want a crispier top, broil for an additional 2-3 minutes at the end.

            Garnish and Serve: Once baked, remove from the oven and let them rest for a few minutes. Garnish with extra Parmesan cheese and parsley if desired. Serve warm with a side of steamed vegetables or a fresh salad.
